Holland America Line Ages Bourbon at Sea in New Partnership

Holland America Line has partnered with Jefferson’s Bourbon to bring ocean-aged spirits directly to its fleet. The collaboration will see barrels of Jefferson’s Ocean Aged at Sea Bourbon maturing onboard each of the line’s 11 ships.

The initiative also expands Holland America Line’s single-barrel program while tying into its broader “Spirit of Independence” theme for the upcoming U.S.  Semiquincentennial.

Beverage Programs Beyond the Ordinary

“This partnership with Jefferson’s Bourbon is another way we’re setting ourselves apart through experiences that are too good to hurry through,” said Drew Foulk, Director of Food and Beverage Revenue and Innovation at Holland America Line, in a media statement. “Aging bourbon aboard our ships and offering it exclusively back to guests later reflects our commitment to beverage programs that are shaped by the journey itself.”

The rollout began in March, with one barrel loaded per ship; by the end of April, the full fleet will carry its own exclusive cask. Each barrel will remain at sea for a minimum of six months, exposed to constant motion, salt air and shifting climates—factors that are expected to influence the bourbon’s flavor profile, depth and finish.

Onboard activations, including guided tastings, will allow guests to explore how different itineraries impact the aging process. Once the barrels are bottled, approximately 150 to 300 bottles per cask will be produced and returned to the ships in 2027 for onboard tastings.

Founded in 1997 by Trey Zoeller and his father, Chet Zoeller, Jefferson’s has built a reputation for pushing the boundaries of traditional whiskey-making. Its ocean-aging concept—originally tested across dozens of voyages on cargo and fishing vessels—aligns with Holland America Line’s emphasis on experiential travel.

The bourbon program is one of several collaborations tied to the cruise line’s America’s 250th celebrationLooking ahead, Holland America Line will mark the milestone with a themed July 4, 2026, sailing from Boston, as well as a 28-day Pan Am-inspired voyage in 2027 tracing historic Caribbean air routes.
