USTOA’s Global Kitchen
Food has long served as a universal language, transcending borders and building bridges between diverse communities. When travelers sit down to share a meal in an unfamiliar destination, they forge connections not only with their companions but with the cultural heritage and traditions that have shaped each dish. Recognizing this, the United States Tour Operators Association has launched Global Kitchen, a video series and cookbook that invites audiences to explore the world through its most authentic flavors.
The series opens on the island of Malta, where centuries of cultural exchange have created a unique culinary identity. Mediterranean sensibilities merge with North African spice traditions, resulting in distinctive offerings such as the island’s beloved flaky pastizzi pastries, slow-simmered rabbit stew, and creamy bigilla bean dip have become synonymous with Maltese street food culture.
The journey continues through Poland’s food scene, where traditional comfort foods have found new expression in the country’s bustling street food markets. Warsaw’s vibrant culinary landscape features everything from pączki, sugar-dusted doughnuts filled with preserves to zapiekanka, an open-faced sandwich that echoes a pizza with distinctly Polish characteristics, as well as Poland’s most recognizable culinary export: pierogies.
Finland’s contribution to the series highlights the Nordic approach to seasonal eating and foraging culture. The cities of Helsinki and Turku serve as backdrops for discovering Karelian pies, traditional porridge-filled pastries. Regional specialties like Turku buns, filled with rich caramel cream, and piispis, doughnut-like pastries with signature pink frosting, set the stage for a mouth-watering dessert experience.
The series concludes in Québec, Canada, where the city’s cultural convergence has produced iconic dishes such as Montreal-style smoked meat sandwiches and distinctively chewy bagels. Perhaps the most emblematic of Québec’s culinary identity is poutine, the comfort food dish of fries topped with squeaky cheese curds and gravy that has evolved from humble origins to gourmet interpretations across the province.
The accompanying Global Kitchen Cookbook provides home cooks with the tools to recreate authentic international flavors. The collection includes signature recipes from recipes from more than a dozen different countries including Buenos Aires, Colombia, Germany, Lanzarote, Laos, Morocco, Thailand, Vietnam, and Zagreb.
