Solaz Los Cabos Debuts Resort-Wide Gastronomic Journey

Solaz, a Luxury Collection Resort, Los Cabos, has introduced the Inclusive Gastronomic Journey, a resort-wide dining program centered on Baja California Sur’s coastal and desert landscapes. The offering threads through six signature restaurants and six bars, with menus built on line-caught seafood from the Sea of Cortez, seasonal regional produce and contemporary technique.

“At Solaz, gastronomy is central to how guests experience the destination,” said Giuliana Torres, General Manager at Solaz, in a press statement. “The Inclusive Gastronomic Journey allows us to showcase the richness of Baja California Sur through the ingredients, traditions and culinary influences that define the region. Each dining experience is designed to create a deeper connection between our guests and the culture of Los Cabos.”

The program spans the length of a guest’s stay, guiding them through curated meals across the resort’s restaurant lineup rather than a single fixed itinerary. Cascabel handles breakfast with traditional Mexican flavors given a contemporary edit. Al Pairo sits clifftop, pairing Mexican cuisine with views over the Sea of Cortez. Mako Pool & Beach runs an oceanfront program that shifts from daytime, ingredient-driven fare to an evening seating built around sunset views. Riccio di Mare focuses on seafood-forward, seaside plates, while Baja Beach keeps things casual with coastal food and cocktails served near the sand. Foresta closes the lineup with a garden setting and globally influenced seasonal dishes.

Beyond the six restaurants, the program extends to chef-led tastings, interactive culinary sessions and structured pairings meant to connect guests directly to Baja’s ingredients and traditions. Craft beverages and gourmet snacks, including select premium labels, are also available across the resort’s bars and pool areas.

The rollout covers the resort’s full dining footprint, from casual beachside service to the clifftop Al Pairo setting, positioning food as a structural part of the guest stay at Solaz rather than an add-on.
