Holland America Line Introduces New Morimoto By Sea Menu

Holland America Line is giving its Morimoto by Sea dining experience a refresh this fall, adding new dishes and updated favorites from Chef Masaharu Morimoto ahead of his 2027 Alaska sailing aboard Nieuw Amsterdam.

The refreshed menu begins rolling out across the fleet this month, starting with Nieuw Amsterdam, and is expected to be available on all 11 ships by mid-November. Morimoto by Sea operates as a standalone restaurant aboard Nieuw Amsterdam and as a pop-up dining experience across the rest of the fleet.

What’s New at Morimoto by Sea

The updated menu continues to focus on Chef Morimoto’s Japanese-inspired cuisine. 

The menu includes new appetizers like Popcorn Shrimp with Morimoto-style gochujang and Vegetable Wonton with Asian sesame garlic chili sauce. New entrees include Tan Tan Noodles in a red curry broth with miso-infused ground chicken and Butter Poached Lobster Tail with warm yuzu butter. 

Travelers can also experience Morimoto’s culinary perspective firsthand when he joins Nieuw Amsterdam’s May 8, 2027, 8-day Alaska cruise roundtrip from Vancouver, Canada.

As Holland America Line’s Global Fresh Fish Ambassador, Morimoto will highlight his passion for fresh fish during the sailing, with special onboard experiences planned around his culinary approach and inspirations.
