The Ritz-Carlton, Key Biscayne in Miami recently debuted its latest multi-phase re-imagination, which included newly designed guestrooms and a new signature dining venue. Recommend had the opportunity to tour the updated property to check out the new features (and feast on some delicious eats, too).

The newly designed rooms exude a laid-back beach vibe, creating a peaceful retreat with tones of blues and grays mingled with pops of green. In addition to an updated room design, new room categories have also been added such as the Ritz-Carlton Suite with two bedrooms, a full kitchen and dining room, plus panoramic views of the ocean from two spacious balconies. The updated rooms also feature smart TVs, and soon guests will be able to unlock their guestroom doors from their smart watch.

Our jaunt to Key Biscayne was rewarded with dinner at the new onsite eatery, Lightkeepers. And wow, what a reward that was. I can attest that if you book your clients a dinner here, they surely won’t be disappointed. This casual, yet elegant restaurant offers both inside and outside seating overlooking the property’s pool with the ocean in the background. Foodies will be delighted with the array of options offered on the menu, as well as choices for craft cocktails. The culinary team sources much of its menu items from Florida, with cheeses from Winter Park in Orlando, beef from Ocoee, and snapper from Key West.

My tasting included black mussels, grilled Spanish octopus, lamb and chorizo, empanadas, tomato fondu, pork belly chicharron, crispy brussel sprouts, matchstick fries, that day’s Keeper’s Catch special, and crab cake. Though our waiter warned us to only have a taste from all of the options as there were a lot more coming, some of these options we couldn’t keep our hands off of. And then came dessert. As three decadent options were laid out in front of us, we couldn’t even imagine how we would try to tackle them all. However, in true journalistic fashion (it’s for the story, isn’t it?) we took a few bites of each: a Key lime cheesecake, a chocolate plantain cake with sea salt caramel ice cream, and a bucket (yes, bucket) of beignets with passion fruit and Valrhona chocolate sauces. Those beignets surely had us dreaming of New Orleans. Confession: I might have done more than just taken a bite of those.

Dessert anyone? They say three's a charm, guess that works for dessert, too.
