As Earth Day approaches, Mauna Kea Beach Hotel, an Autograph Collection property on Hawaii’s Kohala Coast, reaffirms its deep commitment to sustainability with the unveiling of its Ulu Garden.

Part of the resort’s $200-million renovation, the on-site organic garden is a testament to the hotel’s dedication to responsible stewardship of the land and embodies a farm-to-table philosophy designed to minimize the resort’s environmental footprint.

Sustainable Farming in Hawaii

The garden, home to over 45 varieties of vegetables, herbs and fruits, supplies fresh ingredients directly to Manta, the hotel’s signature oceanfront restaurant. Executive Chef Peter Abarcar Jr. and Manta’s Chef de Cuisine Bryan Nagao have collaborated with local agricultural expert Ronen Maman of ‘Io Farms to create a hyper-local culinary program that aligns with regenerative farming techniques, water conservation and waste-reduction efforts.

“Food is not just about nourishment—it’s a vital part of Hawaiian hospitality, a tradition that reflects the spirit and culture of the islands,” said Chef Abarcar, in a press statement. “By embracing fresh local ingredients, sourcing from sustainable farms and incorporating the traditions of the islands, we create dining experiences that connect guests to the land and sea, the heart of our island.”

In keeping with Mauna Kea Beach Hotel’s sustainability mission, Manta’s menu highlights fresh island-grown produce, premium local meats and responsibly harvested seafood.

Michelin-awarded Chef Bryan Nagao brings an innovative approach to farm-to-table dining with Pacific Rim-inspired dishes such as uni pasta, wild-caught Hawaiian ahi and a seafood platter featuring Kona oysters, Kona abalone, lobster and snow crab.

Beyond redefining coastal dining, the Ulu Garden will soon offer educational tours, inviting guests to explore sustainable farming practices and experience the journey from seed to plate.

Mauna Kea Beach Hotel’s dedication to sustainability extends beyond the Ulu Garden. The resort’s phased renovation includes eco-conscious updates such as redesigned guestrooms and suites, a state-of-the-art fitness center and a new destination spa with an infinity pool and al fresco treatment rooms.
