Michael Mina’s Culinary Vision Lands at Walt Disney World

Chef and restaurateur Michael Mina has officially expanded his well-known Bourbon Steak brand to Central Florida with the debut of Bourbon Steak Orlando, now open at the Walt Disney World Swan and Dolphin.

The restaurant marks the newest addition to the resort’s extensive culinary lineup of 23 restaurants and lounges.

Located inside the Dolphin hotel, Bourbon Steak Orlando offers a menu rooted in Chef Mina’s culinary philosophy of product, technique and innovation, with highlights including premium cuts of steak, seafood and indulgent sides—all delivered with an original flair that distinguishes Bourbon Steak from the traditional steakhouse model.

A Culinary Powerhouse

Egyptian-American Chef Michael Mina, the visionary behind The MINA Group, has earned Michelin stars, James Beard Awards and acclaim from Robb Report as one of the “50 Most Powerful People in American Fine Dining.”

Senior Sous Chef Jonathan Hill, a local talent with expertise in steakhouse cuisine and wine, leads the kitchen. Before joining Bourbon Steak, Chef Hill held key culinary positions, such as Chef of Shula’s Steak House and Executive Banquet Chef at the Walt Disney World Swan and Dolphin.

Menu Highlights

Instead of bread, tables are greeted with trio-style duck fat fries and an assortment of house-made sauces—a signature Bourbon Steak touch. The menu’s standout starters include the famed Tuna Tartare, prepared tableside with quail egg and habanero-sesame oil, and Black Truffle Agnolotti stuffed with burrata cheese.

Seafood lovers will find options like Bacon-Wrapped Scallops and a Gulf Shrimp Cocktail served with a gin-spiked sauce. For mains, the steak selection features a 10-oz Filet Mignon to a 40-oz Hay-Smoked Tomahawk Ribeye.

Wagyu aficionados can savor Miyazaki A5 Strip Steak and Snake River Farms Rib Cap. For guests who prefer fish, there are dishes like Miso Broiled Sea Bass and Big Eye Tuna Au Poivre. Classic sides get an elevated makeover, too, with Truffle Mac & Cheese, Jalapeno Creamed Corn and Creamed Spinach topped with crispy shallots.
