Princess Cruises Brings Makoto Ocean Sushi to Diamond and Sapphire Ships

 
 

Princess Cruises is expanding its acclaimed Makoto Ocean specialty sushi restaurant to two of its Diamond-class ships—Diamond Princess and Sapphire Princess—beginning this fall. Guests sailing to destinations including Antarctica, Southeast Asia and Japan will soon be able to experience Chef Makoto Okuwa’s Edomae-style sushi at sea.

A Passenger Favorite Now on Diamond & Sapphire

Makoto Ocean debuted aboard Sun Princess in 2024 and is set to open on Star Princess in October 2025. The venue quickly became a passenger favorite for its refined yet approachable take on traditional Japanese sushi, and its expansion brings the concept to more itineraries across the Princess fleet.

Chef Makoto Okuwa, who brings more than 25 years of culinary expertise, offers a modern interpretation of Edomae-style sushi—a technique that originated in 1820s Tokyo and combines vinegared rice with fresh, locally sourced fish. His menus blend Japanese tradition with contemporary presentation, featuring artfully crafted dishes such as truffle salmon, snow crab temaki and toro tartare.

“It’s a true honor to bring Makoto Ocean to Diamond and Sapphire Princess as they sail through the waters of my homeland and beyond,” said Chef Okuwa, in a media statement, whose culinary career includes appearances on Iron Chef America and recognition from the James Beard Foundation.

The specialty restaurant will also serve handcrafted cocktails inspired by Japanese flavors, such as the Genmai Negroni and Kodai No Hana, which features yuzu juice and Doburoku, an ancient style of sake.

Makoto Ocean will be located on Deck 7 aboard both ships, accommodating up to 80 guests. The dining experience is priced at $60 per person and is included for guests with the Princess Premier Package.

Diamond Princess’ Makoto Ocean will replace the former Kai Sushi venue. Both restaurants are scheduled to open later this fall.
